So I have been having this for breakfast for the past little while and I am loving it. It is quick and tastes great.
I start off by cutting up:
1/4 of any color pepper
1/6 of a large onion
4 medium Mushrooms
1 small tomato
1 tbsp olive oil ( as you will soon tell, I only use olive oil as my oil base)
Put it all in a medium size pan on medium heat and cover stirring on occasion

As this is sauteing, pull out your Southern Flavor seasoning. From what I understand, this is only found in the South, and I got it from a friend whose sister lives in Alabama, so when I run out I am going to have to start the search.. but add this or a seasoning that you enjoy to taste

Beat some eggs, as many as you like, With the above I usually do 3, but you could do up to 5 or 6 and still get enough veggies, I just like more veggie then egg.

Add the beaten eggs to the sauteing veggies and and stir around mixing it generously

once mixed together bring it all to the center and let it sit for about a minute and 30 seconds, using your spatula, flip the whole thing over. The bottom should be a little crispy. let it sit on the other side for about 1min, 30 sec and place on your plate

Then Enjoy your wonderful Frittata in the morning...!
